Refining a yellow curry recipe

The full curry-paste and curry recipe, including the chili reduction and the missing paste-dose correction.

I asked for a yellow curry that would be better than every other one, and the assistant responded with the confidence that kind of prompt invites. The practical work came when I started questioning it. What was galangal doing in the paste? How much of that large batch of paste actually went into one pot? Were 10–15 dried Thai chilies sensible for this version?

Those follow-ups changed the recipe. The final discussion settled on 3–5 chilies in the paste and 3–4 tablespoons of prepared paste in a curry batch, with the rest left over. I asked for the document to be updated so the amount was in the method, not buried in a later explanation. The ingredient list and steps below follow that later version. There is no cooking result in the chat, so the real outcome is a clearer, testable recipe built by pushing back on its first draft.

Yellow curry with a separate paste batch

Curry paste

Coriander seeds 3 tablespoons
Cumin seeds 2 tablespoons
Whole black peppercorns 1 tablespoon
Turmeric powder 1 tablespoon
Curry powder, cinnamon, paprika, salt 1 teaspoon each
Dried Thai chilies 3–5, adjusted to taste
Lemongrass 1 stalk, white part finely chopped
Garlic 4 cloves, peeled
Shallots 2, peeled and chopped
Galangal 1 thumb-sized piece, peeled and chopped
Ginger 1 thumb-sized piece, peeled and chopped
Lime Zest of 1
Shrimp paste 3 tablespoons, optional in the original formula
Vegetable oil 1 tablespoon for blending

The source estimated approximately 200–250 grams of finished paste. I have not treated that estimate, or its tablespoon-to-gram conversion, as a measured result.

One pot of curry

  • 3–4 tablespoons of the prepared paste, not the whole batch
  • 1 pound chicken thighs, cut into bite-sized pieces
  • 2 large potatoes, peeled and cubed
  • 1 large carrot, sliced
  • 1 red bell pepper, sliced
  • 1 can coconut milk, 400 ml
  • 2 cups chicken or vegetable broth
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1 tablespoon lime juice
  • A little vegetable oil for cooking
  • Thai basil and cilantro for garnish
  • Cooked jasmine rice to serve

The proposed vegetarian variation used tofu, vegetable broth, soy sauce instead of fish sauce, and omitted the shrimp paste. Those substitutions need to be considered together.

Method

  1. Toast and grind the spices. Toast the coriander seeds, cumin seeds, and peppercorns in a dry skillet over medium heat for roughly two to three minutes, until fragrant. Cool slightly, grind, then mix with the remaining dry spices and salt.
  2. Blend the paste. Combine the ground spices with the chilies, lemongrass, garlic, shallots, galangal, ginger, lime zest, optional shrimp paste, and tablespoon of oil. Blend to a paste, using a little water if needed to keep it moving.
  3. Brown the chicken. Heat a little oil in a large pot. Brown the chicken pieces, then set them aside; browning is not the final doneness check.
  4. Cook the measured paste. Add a little more oil if necessary, then cook 3–4 tablespoons of paste for three to five minutes, stirring constantly, until fragrant and slightly darker.
  5. Build the sauce. Stir in the coconut milk and broth. Bring to a simmer, add the potatoes and carrot, and cook for about ten minutes.
  6. Finish cooking. Return the chicken and add the bell pepper. Simmer for approximately 15–20 minutes, until the vegetables are tender and the chicken reaches 165°F / 74°C. USDA safe-temperature chart.
  7. Season and serve. Stir in fish sauce, sugar, and lime juice. Taste before making further changes, garnish with the herbs, and serve with rice.

The useful corrections

The chili count and paste dose are different decisions. Reducing heat in the paste does not answer how much paste the curry needs. I had to ask both questions before the instructions became usable.

Galangal was another ingredient I stopped to ask about. It remained separate from ginger in the final formula; the conversation did not establish that they were interchangeable in equal amounts.

The final version at least told me how many chilies went into the paste and how much of that paste went into one pot. That is a recipe I could test. The chat ends before a cooked result, so the corrections—not a claim that it was the best curry—are what this entry preserves.
